Egg Boat Breakfast

What could be more delicious on a Sunday morning than eggs and bread? Not much! This breakfast was fantastic, simple and delicious as always. It's ready in 30 minutes and is packed full of flavor. Of course, I found the idea on Pinterest - try not to be shocked lol - but Zach and I took a different spin on it. But honestly once I read: bread, prosciutto, and Parmesan I knew it would be amazing....and it was! So no big build up - let's just bake this thing!

Ingredients:
4 small baguettes (we used Pretzel baguettes but Sourdough or French would be perfect too)
5 eggs
1/3 cup of heavy cream
2 green onions - chopped finely (not the white part)
5 slices of prosciutto - lightly pan fried to make it crispy
3 tbsp grated Parmesan
salt and pepper to taste

Directions:
Preheat your oven to 375 degrees. While your oven is warming, take each of the baguettes and remove the centers - creating a little boat to hold the egg mixture. (You can totally save the inside of the baguettes for croutons later.)

In a bowl, beat the eggs, cream, onion, prosciutto and Parmesan together. Pour the egg mixture into the 'boats' and place them in the oven for 25 minutes. When they're ready, the egg will have risen and will be a golden brown. The end result is a quiche-like treat in the middle of a fabulous baguette! You can serve them as is or you can slice them up into a few pieces per boat and serve them as appetizers or whatever! Truly delicious!!!
