Cauliflower "Pizza"

Yes...it's true...pizza made from cauliflower! Ok, so let's use the term 'pizza' loosely but it still totally counts! It's low carb, low calorie, yet surprisingly loaded with flavor! How is this possible? IDK it just is!!! The way the cauliflower is riced in combination with the mozzarella just works, trust me! I know it sounds ridiculous but just go with me on this...have I ever steered you wrong? I think not!

Alright so this recipe will take you about forty minutes from start to finish. The key is ricing the cauliflower and then being patient enough to cook the 'dough' properly. All you have to do is add your toppings and broil for 4 minutes and it's ready. The only thing that makes this recipe 'un-pizza-like' is that the crust is a little soft because it's...well...made from cauliflower of course, so it wont be crispy or full like a normal flour crust would be. However Zach and I used a fork for the first half of each slice and then were able to pick it up and eat the rest like a normal slice of pizza. I am telling you the flavor is just like normal pizza! It's great for those who are looking for figure-friendly dishes or just someone looking to try something new...trust me...it's amazing!

Ok are you ready for this...let's go!

Ingredients:
"Pizza Dough"
1 Head of Cauliflower
2 Eggs
1 cup of mozzarella - shredded
Non-stick cooking spray
Dash of oregano
Dash of garlic salt

Toppings
You can honestly top this pizza with whatever you'd like. For ours, Zach and I wilted some spinach, fried a few pieces of ham, shredded some Parmesan (ok a lot of Parmesan - I'm Italian - it's required), and used a tomato basil marinara with some red pepper flakes.

Directions:
Before you can do anything you need to 'rice' your cauliflower. Evidently, there is something called a ricer lol but for those of us less equipped in the kitchen a simple cheese grater will work just fine! Basically, just rub the head of cauliflower on the grater (this doesn't include the stem, it's a little tougher and you just don't need it.) Once it's all shredded, place it in a microwave safe bowl and heat it for 8 minutes. (Don't add water, don't cover it with anything, just throw it in and let it do it's thing.) Once it's done, add in the shredded mozzarella and eggs and stir with a fork until it is thoroughly combined. You can add the oregano and garlic salt to your liking - I think we added about a teaspoon of each.

Preheat your oven to 450 degrees.

Spray a baking sheet generously with non-stick cooking spray. Then, just spoon the 'dough' onto the baking sheet and using your fork, or spoon, smooth it out to about 1/8" to 1/4" in thickness. Cook the 'dough' for about 20 minutes (or until it is golden brown - see pictures below). Once it's nice and golden you can add your toppings. Since you're just going to put the pizza in the oven to melt the cheese make sure your other toppings are hot and ready to go i.e. your sauce or whatever you're dressing it up with. Then just place the pizza in the oven on broil for 3-4 minutes, until your cheese is golden brown and it's ready!

Since the 'dough' is not really a dough you wont need a knife to cut it, a spatula will work just fine. Serve it up with a fork since it's not the most firm 'dough' and enjoy - it is seriously delicious!!
